I love pizza. Most of the time we order pizza delivery but once in a while it is fun and yummy to make my own.
The pizza in this post is cheese-less. My guys are lactose intolerant and my sinuses do better with a little less cheese. Sometimes I will put a light layer of cheese on for special occasions.
First we start with the dough....
1 T or package or dry yeast
1 t. white granulated sugar
1 cup warm water
1 t. salt
2 1/2 cup flour (you might need a touch more)
1 T. olive oil
a dash of Italian seasoning--- optional
Start by letting the yeast activate in the warm water, sugar and olive oil mixture. Then add the flour and the salt. Mix together well either by hand or with a mixer. Add additional flour if needed to get a smooth, elastic but firm dough. Let it rest for 5-10 minutes.
While the dough is resting, cut the pizza toppings into bite sized pieces.... black olives, green olives, spinach, mushroom....
Next roll out the dough on a cookie sheet or baking stone. I like a baking stone because it give the dough a crisp but not tough crust.
Add pizza or pasta sauce to the top of the pizza. You can do lots of sauce or a little.
Now add your toppings. (including cheese)
While you are rolling out your dough and adding the toppings, pre-heat your oven to 425 degrees.
Let the pizza rest for another 5 minutes before putting in the very hot oven.
Bake for 15-20 minutes. Watch closely because you don't want the crust to burn.
Cut into slices and enjoy!!
